Velvety Roasted beets soup with garlic, thyme, onion & cauliflower a delicious low calorie super healthy soup. Only 34 calories for one whole cup with 4 grams net carbs

yields: 15 cups

equipment needed:

  • high power blender
  • large braiser dutch oven or soup pot
  • large oven sized baking sheet

prep time: 10 minutes

cook time: 30 minutes

what you need:

  • 2 lbs beets trimmed (not peeled) cut into 1/2 inch cubes
  • 3 garlic cloves finely minced, grated on a cheese grater or micropane
  • 1 tsp fresh thyme or 1/2 tsp dry thyme
  • 1/4 tsp salt
  • 2 cups onions chopped
  • 1 tbsp cashews
  • 1/2 tbsp oil
  • 3 cups chopped cauliflower
  • 7 cups broth, i used Imagine's no-chicken broth
  • cooking oil spray
  • salt & pepper to taste

what to do:

  • preheat oven to 425
  • grease large baking sheet
  • toss the beets garlic and thyme with 1/2 tbsp oil & salt, mix well spread out on baking sheet and spray
  • place in oven for 30 min
  • preheat large braiser/pot to medium high
  • spray and add onions & cashews, saute 7 minutes
  • add cauliflower & broth, cover bring to a boil then let simmer covered 15 minutes
  • add beets to pot, mix and take off of heat.
  • Puree in batches in blender, mix well & season to preference

i served it topped with a bit of coconut yogurt and herbs... and also i just poured some in a mason glass and drank it :) i absolutely love this soup, so satisfying, healthy & low calorie!
