Romanesco is a a beautiful member of the cruciferous family a.k.a. superfood!.
incredibly healthy beautiful and delicious.
this recipe keeps it simple, just romanesco onion and an oven :)

difficulty level: ultra beginner ;)

equipment needed: none

what you need:

  • 2 small heads romanesco core removed, sliced into 1/4 slices
  • 1 large vidalia/sweet onion cut into 1/16ths lengthwise
  • 1/2 tbsp avocado oil
  • 1/4 tsp salt + some extra
  • black pepper (according to preference)

what to do:

  • preheat oven to 450 degrees
  • toss romanesco and onions with oil and 1/4 tsp salt
  • line a large basking sheet (oven sized) with parchment paper
  • spread romanesco and onions evenly onto baking sheet, aiming for single layer
  • put into oven for 30min
  • remove from oven, flip the veggies around and bake another 5 minutes
  • sprinkle with salt and pepper to taste
