Perfectly roasted butternut squash with roasted garlic, onions & a touch of vegan butter, mashed with cauliflower for a super tasty healthy low carb mash.
Paleo dairy free, vegan, super healthy, low carb and addictive!

cook time: 32 minutes

what you need:

  • 2 1/2 lbs peeled cubed organic butternut squash. so easy to find this prepped in stores these days
  • 2 medium/large heads of organic cauliflower chopped up roughly
  • 4 garlic cloves halved lengthwise
  • 1/2 cup finely chopped onion
  • 1 tbsp avocado oil
  • 2 tbsp vegan butter
  • 1/2 tsp salt
  • additional salt and pepper to taste
  • cooking oil spray (I use coconut)

what to do:

  • preheat oven to 425 degrees
  • line a large baking sheet with foil, spray with oil
  • place the garlic, onions & avocado oil on a rectangle of double folded foil, close the foil tightly making a small sealed package
  • spread out butternut squash cubes, spray generously, mix around and spray again
  • nestle the onion & garlic foil package in the middle of the tray
  • place butternut squash & garlic onion paket in oven on middle rack for 30min
  • steam the cauliflower for 20 minutes, you can use a dutch oven or 12" non stick pan with a lid, with an inch of water at the bottom.
  • drain cauliflower i colander
  • once the butternut squash is all roasted, process all ingredients in a food processor, I had to do this in two batches, then mix them together
