Organic green beans roasted to perfection, tossed with vegan Parmesan cheese & spices. An easy to make fancy looking amazing tasting side dish!

here is my recipe for easy and delicious Vegan Parmesan

difficulty level: very easy

yield: 8 cups

equipment needed: large oven sized baking sheet

prep time: 5 minutes

cook time: 25 minutes

what you need:

  • 2 x 16 oz bags frozen organic haricots verts (green beans) thawed, drained and thoroughly dried
  • 1 tbsp Dijon mustard
  • 1 tbsp avocado oil
  • 3 - 4 tbsp vegan Parmesan for cooking + 2 more for garnish
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • extra salt pepper & garlic powder to reference

what to do:

  • preheat oven to 400 degrees
  • grease a large oven sized baking sheet
  • mix the Dijon & oil, whisking them together until well incorporated
  • toss the green beans in the dijon oil mixture, i used my hands.
  • sprinkle with 1/2 tsp salt & 1/2 garlic powder, toss again.
  • spread beans on the baking sheet
  • sprinkle with 4 tablespoons vegan Parmesan
  • place in middle of oven and bake 25 minutes
  • remove from oven, sprinkle with extra Parm & salt pepper or extra garlic powder to taste

I use organic frozen green beans, it speeds up the prep considerably, if you are using fresh green beans i would recommend to blanch them first, and adjust the roasting time, you will just have to experiment! :)
