This recipe turned out INCREDIBLE! General Tso's sauce is a spicy/sweet/salty sauce, and OF COURSE i made it sugar free ;) but trust me no one will know!
This is a seriously addictive, and a wonderful way to get non veggie lovers to eat cauliflower aaanndd ask for more!

what you need:

for cauliflower:

  • 1 medium head cauliflower, cut into small florets or half florets
  • 1/4 cup white rice flour
  • 1/4 tsp garlic powder
  • 1/4 cup +2 tbsp cold water
  • cooking oil spray

for General Tso sauce:

  • 1/4 cup gluten free tamari or soy sauce
  • 1 tbsp rice wine vinegar (or white vinegar)
  • 1/2 tsp toasted sesame oil
  • 1/4 tsp garlic powder
  • 1/4 tsp ginger powder
  • 1/2 tsp powdered stevia
  • 1/2 tsp toasted sesame oil
  • arrow root slurry = 1 tbsp arrow root starch mixed with 4 tbsp cold water. you can use cornstarch

what to do:

  • preheat oven to 450 degrees
  • line a large baking sheet with foil, spray with cooking oil
  • combine rice flour, garlic powder & cold water and mix well
  • pour the rice flour and water mixture into a large ziplock bag or tupperware with a lid
  • add cauliflower pieces and toss well shaking around to coat
  • remove the cauliflower one piece at a time, gently shaking of excess liquid and place on greased baking sheet
  • arrange the florets spread out on the baking sheet, not crowding, spray with cooking oil
  • place into oven for 10 minutes
  • remove from oven, flip, spray again and return to oven for 7 minutes
  • meanwhile place all general tso sauce ingredients, except arrow root slurry, into a small sauce pan. Cook on medium high for 3 minutes stirring,
  • turn off heat and immediately drizzle in the arrow root slurry while stirring sauce briskly with a spatula until a smooth sticky shiny consistency is achieved without any clumps
  • once cauliflower cooking time is done, take it out of the oven, keep the oven on
  • place cauliflower florets in large tupperware with a lid, pour almost all the general tso sauce on top (reserve 2 tbsp on the side). close the lid and gently shake and flip tupperware around to evenly coat the florets
  • place florets back onto the baking sheet spread out, spray lightly with oil, bake 7 minutes
  • take baking sheet out, flip florets spray lightly again, bake 5 more minutes

Voila! a super healthy, creative and incredibly tasty way of eating you veggies!
you can serve this just by itself as an appetizer, or on a bed of rice or as i did... on top of some more veggies ;) sprinkle with some toasted sesame for an added crunch
